ABSTRACT
The physico-chemical characteristics such as physical (seed size, L/B ratio, grain classification), chemical (alkali spreading value, amylose content), cooking characteristics (cooking time, KLAC, elongation ratio), organoleptic quality and protein profiling were studied for landraces/hybrid rice varieties from Eastern Uttar Pradesh. Some of landraces/hybrid rice varieties are with excellent biochemical characteristics. The rice variety MEPH 113 which has good grain quality could be used in breeding programmes. Highest seed length (10.29 mm) and seed breadth (3.11 mm) and amylose content (24.53) was recorded in hybrid rice MEPH 113, whereas lowest value 7.89 mm, 2.00 mm and 14.58 for the same quality were observed in Narendra Lalmati and NDR 97 respectively. Maximum protein bands were recorded in NDR 97 and IR 64 (12) and minimum were recorded in XRA 27934. The paper has concentrated on the physical characteristics and organoleptic test and biochemical analysis with consumer preferences of rice varieties. Organoleptic analysis always helps the consumers to select better rice varieties for their consumption and use. It is also emphasized that the training and recruiting the sensory expert panel are important in the process of sensory analysis and organoleptic test. The co-efficient of correlation between L/B ratio and cooking time, alkali spreading value, amylose content was negative significant and seed length, seed breadth, KLAC were positive significant.
