ABSTRACT
An experiment was conducted to see the effect of 0 (control), 1000 ppm, 2000 ppm 3000 ppm KMnO4 soaked paper on different ripening stages of sapota to study their shelf-life. The effect increased with increasing concentrations of KMnO4. KMnO4 3000 ppm soaked paper was found to be most effective to reduce the PLW and decay loss. Among the various quality parameter i.e. TSS, total sugars, reducing sugars and non-reducing sugars were retained in higher amount upto end of storage in KMnO4 soaked paper. Among the different ripening stages, mature fruits retained all the quality parameter in higher amount upto 8th day, and 2nd day in half ripe fruits whereas in full ripe stage this was not retained to such an extent from the beginning itself.
