ABSTRACT
A non-destructive technique based on acoustic resonance, to determine the maturity stage of sapota was developed. The study was conducted on two sapota varieties ('Cricket Ball' and 'Pala') at three maturity stages (mature green, semi-ripe and ripe). Non-destructive (stiffness coefficient) and destructive (firmness, total soluble solids and titratable acidity) parameters were measured for all maturity stages. Non-linear regression models were developed between stiffness coefficient and individual destructive parameters; amongst which total soluble solids values showed best results (r2 = 0.90 for 'Cricket Ball' variety and r2 = 0.96 for 'Pala' variety). The overall classification efficiency of the sorting technique was found to be 89 % for 'Cricket Ball' and 91 % for 'Pala' varieties.
