ABSTRACT
Scientific investigations on aloe vera have gained more attention over the last several decades due to its reputable medicinal properties. Aloe vera has a long history as a medicinal plant with diverse therapeutic applications. An experiment was conducted to evaluate the physical properties and amount of dietary inclusion of aloe vera leaves. Physical properties viz., leaf size, shape, volume, weight, total soluble solids and density were determined. Many of the health benefits associated with aloe vera have been attributed due to the presence of protein, carbohydrate, fat etc. in the gel of the leaves. Proximate analysis of the peeled and unpeeled leaves revealed moisture content, 5.21 and 5.86 %; fat, 1.58 and 1.96 %; protein, 4.96 and 6.41 %; ash, 20.97 and 24.87 %; fibre, 6.97 and 9.19 %; carbohydrates, 60.31 and 51.71 %; energy, 261.24 ± 10.73 and 232.63 ± 14.59 kcal.
