ABSTRACT
Raw and ripe alu fruits were dried by using sun and oven drying methods. All the fruit pieces were treated with five different pretreatment such as 0-5% salt concentration treatments. The salt were sprayed on the fruit pieces. The effect of sun and oven drying on drying rate, drying ratio, No. of hours requried for drying and percent loss of moisture was studied. There was decrease in the drying rate, drying ratio, No. of hours and percent loss of moisture as the salt concentration increases in both mature and ripe alu fruit by using both the methods.
