ABSTRACT
Cissus quadrangularis is one of the major perennial crops known for its therapeutic properties. Ethanolic extract of Cissus quadrangulris stem was analyzed for total antioxidant property using spectroscopic method and found to have 46.23 micrograms per ml of total antioxidant property equivalence of ascorbic acid. Edible coating solution (ECS) was prepared at different concentration of starch (s) (3,4 and 5%), glycerol(g) (20,30 &40%) and Cissus quadrangularis extract(C) (5,10 &15%) using box Behnken statistical design under response surface methodology. Rheological properties, pH, electrical conductivity and surface tension properties of the formulated solutions were studied. Rheological property of the ECS was analyzed by increasing shear rate from 0-100 s-1. ECS followed non- newtanion, Herchel bulkley fluid curve with yield stress value and shear thinning behavior under increasing shear rate. pH (5.00-6.80) was dependent upon the proportionate combination of base material. Electrical conductivity of the formulated ECS decreased significantly(P<0.01) with increase in starch concentration. Plant extract has shown significant(P<0.01) effect on increasing the electrical conductivity. Surface tension significantly(P<0.01) decreased with increase in plant extract concentration.
