ABSTRACT
The use of solar energy was reported by many researchers for value addition and processing of farm crops. Scanty work is also reported for milk processing, especially pasteurization of milk. This study dealt with the sterilization of milk using solar energy. Since, no such study was reported till date, therefore, no protocol was there to follow for milk sterilization using solar energy. Under the present study experiments were conducted under Punjab conditions during various seasons under various weather conditions to ascertain the possibility of attainment of sterilization temperature-time combinations. Milk was sterilized in bottles, sterilization test was performed, time-temperature combination was observed, day of time suitable for sterilization of milk was studied, sensory evaluation of sterilized samples was performed and water saving in comparison to prevalent industrial method was also studied. It was concluded from the study that solar parabolic dish can be used for milk sterilization. The required temperature-time combinations were achieved during the study and samples were found to be better in certain quality aspects as compared to industrial method of milk sterilization.
