ABSTRACT
Investigations were carried out to standardize the best methods of drying for leaves pipal, banyan and silver oak. Two stages of harvest, namely, immature stage and mature stage were assessed under methods of drying to standardize the optimum stage at which drying is perfect to retain colour, shape and the visual quality at its best. Results of experiment on different methods of drying on quality, as per-harvesting stage revealed that time taken for perfect drying of foliages was shorter with maximum score in texture, shape; overall acceptability in oven press drying immature leaves of pipal. In banyan, immature leaves showed more acceptable than other methods with least drying time. Likewise, leaves of silver oak immature, showed maximum acceptability than that of matured leaves, although microwave drying showed least drying time and good colour retention, it was not up to the mark in the other entire attribute.
