ABSTRACT
An experiment was conducted at the Department of Post-Harvest Technology, Kittur Rani Channamma College of Horticulture (University of Horticultural Sciences, Bagalkot), Arabhavi of Gokak Taluk of Karnataka during the year 2010-11 to standardize the drying temperature for dehydration of gerbera flowers in hot air oven and to know the effect of different drying temperatures of hot air oven on physico-chemical parameters and quality parameters of dried gerbera flowers. Gerberas are dried in hot air oven with different temperature levels. Dry weight of flowers was influenced by drying temperatures in hot air oven. Among the different drying temperatures, minimum dry weight (1.20g/flower) was noticed by those flowers dried at 600C for 26.12 hours with highest moisture loss (84.67%) by embedding in sand. The flowers dried at 600C for a duration of 26.12 hours was found to be the best with respect to colour, shape, appearance and over all acceptability.
