ABSTRACT
Marmalade is a jelly with pieces of fruit suspended in it and mainly consumed in pastries, households, hotels, schools and military camps. Aloe vera fortified marmalade is prepared from lime (Citrus × aurantifolia) fruits and aloe vera (Aloe barbadensis Miller) leaf. Aloe vera enhances its nutritional and medicinal values when the products is made with it. In this study some physical properties of lime such as moisture content, size in terms of length, width and thickness, volume, sphericity, peel thickness, pulp to peel ratio, juice recovery were determined. Also, the different parameters of aloe vera leaf like moisture content, physical properties namely, size in terms of length, width and thickness, leaf weight, pulp weight, pulp recovery was measured prior to the preparation of the marmalade. The average moisture content for kagzi lime, lime juice and Aloe vera were found to be 86.811, 92.235 % (wb) and 97.722 and 99.035 % (wb). The average size, volume and sphericity of the lime were found to be 44.24 mm and 45.61 cm and 0.961 respectively .The maximum, minimum and average juice recovery and pulp to peel ratio of the lime fruit was recorded to be 31 %, 24 % and 27 %; 5.31, 2.62 and 4.01 respectively. The average size of aloe vera leaf was found to be 97.21 cc. The maximum, minimum and average weight of the aloe vera leaf was recorded to be 157.12 g, 121.83 g and 137.12 g. The average pulp weight and pulp recovery of the aloe vera leaf was recorded to 73.87 g and 53.77 %.
