ABSTRACT
The present investigation is carried out with objective to study the suitability of different drying treatments and method for Roselle Calyces.The samples were subjected for the different treatments such as without blanching, blanching for 1 min, 2 min and 3min, different drying methods. Further, the effect on drying on colour acceptability, drying yield, drying ratio and overall acceptability was determined. The results revealed that slight variations exist with respect to yield of product, while the the cabinet dried sample (C160) showed higher values (12.3R) for colour and drying ratio can be directly correlated to drying yield of Roselle. Amongst the different methods, cabinet drying resulted in minimum drying time (8h) compared to sun (26h) and shade drying (73h). It is concluded that cabinet dried sample with prior blanching for 1 minute was optimum in terms of high colour quality for drying of Roselle calyces amongst all other treatments and drying methods.
